Markus Rothkranz and his girlfriend Cara Brotman are both vegan chefs that have an affinity for writing vegan cook books and working on their vegan YouTube channel. One of Cara’s recipes was recently released on Markus Rothkranz’s YouTube channel. Her newer recipe was cauliflowers with cashew cream.
At the start of the video she says to get together one cauliflower, one red onion, one cup of soaked cashews, olive oil, rosemary, sage, garlic powder, onion powder, one half a clove of garlic, sea salt and pepper. These are the ingredients for the full recipe.
Cara starts off by chopping the cauliflower. She placed it in a bowl and put some oil, salt and pepper on it. Then she placed it into a dehydrator for two hours at 118. Then she chopped up the onion. She put oil, salt and pepper onto it and placed them into the dehydrator for two hours along with the cauliflower.
While the onions and cauliflower is dehydrating, Cara puts together the cashew cream. She pours the cup of soaked cashews into a blender. Then she adds a little of all of her seasoning and herbs into it along with some oil. While she is blending it she keeps the lid off the blender and adds some water to it while it blends to make it more creamy.
“My God!” she exclaims about the cream once she tries a small bite of it.
After two hours in the dehydrator, Cara removes the onion and cauliflower. She pours it all into a bowl. Then she adds dates, pine nuts and the cashew cream. Last of all she says some more salt, pepper, cilantro and squeezed lemon might be good additions to the recipe.
